ZUCCHINI NOODLE 'PAD THAI'
I am obsessed with my julienne peeler and mandolin slicer. Depending on the veggie, the tool differs, but the result is the same - awesomely fabulous spaghetti like veggies. Love it!
ZUCCHINI NOODLE 'PAD THAI' // makes enough for 3 lunches
Loosely inspired by what's cooking good looking
Ingredients:
Salad
3 medium zucchinis
3 handfuls chopped kale
handful of chopped cilantro
Sauce
1/4 cup peanut butter
1 clove of garlic
2 tbsp soy
1 tbsp sesame soil
1 tsp grated ginger
juice from 1 lime
3 tbsp water
What to do:
Using your mandolin or julienne peeler, prepare the zucchinis into a large bowl; mix in the chopped kale and cilantro.
In a bullet or food processor, blend together all the sauce ingredients; toss into veggies and dress with chopped peanuts.
