RADISH CUCUMBER SALAD WITH 'FRENCH DRESSING'
I was mesmerized by the radishes in the market yesterday and knew that I had to buy them. We had hamburgers for dinner tonight, taking advantage of the 22 degree weather in September. A simple crunchy salad seemed like the perfect side dish. Nigel was craving a french dressing (apparently radishes = french dressing in his mind), so we whipped up one based on what we had in the pantry.
RADISH CUCUMBER SALAD WITH 'FRENCH DRESSING' // makes enough for 4
Ingredients:
For the salad...
8-10 medium sized radishes, wash, ends removed
1 english cucumber
1/4 cup chopped flat leaf parsley
For the dressing...
1/8 cup vinegar
1 tbsp water
1/3 cup vegetable oil
1/2 tsp salt
1/4 tsp mustard powder
dash of garlic powder
1/2 tbsp onion powder or flakes
1/2 tbsp ketchup
1/4 tsp sugar
1/4 tsp paprika
dash of pepper
What to do:
Slice the radishes and cucumber as thinly as possible; mix with the chopped parsley.
For the dressing, shake all ingredients vigorously in a sealed glass jar.
Dress the salad and allow to marinate for at least 15 minutes before serving.
