Today's post is quick, simple and in honour of cinco des mayo! I love fajitas, but hate buying the pre-mixed seasoning (you know what I'm talking about). We came across this home-made seasoning, and I couldn't believe how the taste resembled the store bought kind. Prep the seasoning ahead of time so you have it stocked in the pantry. I have no photos of the finished fajita dinner, but I've broken down a quick recipe below.
FAJITA SEASONING
Ingredients:
2 tbsp corn starch
2 tsp chili powder
2 tsp kosher salt
2 tsp paprika
1 tsp sugar
1 tsp onion powder
3/4 tsp cumin
1/2 tsp garlic powder
1/2 tsp cayenne
What to do:
Combine all ingredients in an airtight jar.

When making chicken fajitas, assume the following rough guidelines:
- 2 chicken breasts, diced
- 1/2 cup water + 2-3 tbsp seasoning
- 3 coloured peppers, thinly sliced
- 1 onion, thinly sliced
Pan fry the chicken in some olive oil first. Then add the water/seasoning mixture, onions and peppers. Continue to cook until the veggies are cooked through.
Wrap in a warm and blistered flour tortilla and you're set!
