What to do with one lonely eggplant and a slew of leftover herbs? Attempt home made baba ganoush? Why not?
BABA GANOUSH // serves two for an afternoon snack
Modeled after Ottolenghi's Baba Ganoush described in Jerusalem
Ingredients:
1 medium size eggplant
1 tbsp chopped flat leaf parsley
1 tbsp chopped mint
zest from 1/2 a lemon
juice from 1/2 a lemon
drizzle of olive oil
s+p
What to do:
Slice the eggplant in half and bake skin side up in a 375 oven for 1 hour;
Scoop out the inside and let drain for ~30 minutes;
While eggplant is draining, prepare the other ingredients in a bowl;
Mix drained eggplant into herbs and lemon and drizzle with salt, pepper and olive oil;
Mix well, making sure to break up the larger eggplant chunks;
Serve with pita chips or crackers.
